The Morellino di Scansano of the Cavallini estate is made from Sangiovese and Alicante grapes, picked by hand during the last ten days of September. Brilliant red with a bouquet of cherry and red fruits, it makes a perfect accompaniment to all traditional local dishes.
Diaccio is Vermentino picked by hand on the Poggione hill. Freshness is key: from the picking of the grapes during the coolest hours of the morning, to the glass at an ideal serving temperature of 12°C. Straw yellow colour with golden glints. Citrus notes and pear, which give way to echoes of fresh wild flowers, mineral with great persistence. Enjoy it as aperitifs, or with seafood and fish.
Alicante made with 100% Alicante grapes, hand-picked the first ten days of October. A clear ruby red with strawberry and violet aromas. Accompanies the entire meal from appetizer to dessert.
Pause comes from the vineyard in the lee of Poggio Campana. A small Merlot cru adapted to the Mediterranean climate. Low yields, picked by hand and macerated at length, combined with the prolonged refining times, give this wine its deep and spicy character. Ideal with red meats, cheeses, and for drinking after dinner.
