Production area: Locality of Cavallini, Manciano (Gr)
Blend: Vermentino picked by hand in boxes, in the coolest hours of the morning, on the “Poggione” hill in the Cavallini estate
Soil: clay soil, rich in minute red rock fragments
Training system: guyot
Planting density: 5000 plants per hectare
Grape yield: 2 kg per vine
Harvest: second ten days of September

Alcohol content: 13.00 % vol.
Total acidity: 6.5 gr/l
pH: 3.30
Residual sugar: 1.20 gr/l

Vinification: Prefermentative maceration, fermentation using native yeasts in controlled- temperature steel vats.
Refinement: sur lie in steel tanks for six months


Colour: straw yellow with golden glints
Bouquet: Initial citrus and pear notes give way to echoes of fresh wild flowers 
Taste: fresh, dynamic, citrus and mineral notes reappear.
Serving suggestions: excellent as an aperitif, or with sea fruits and fish. Serving temperature: 12°
